At the heart of our project is a simple idea: no harvest should go to waste. Born from years in the restaurant industry and a firsthand view of just how much good food gets tossed, we set out to change the system—one jar, one batch, one rescued ingredient at a time. We partner with local farmers & growers to take what’s in excess—what would otherwise never be sold—and transform it into nutritious, shelf-stable products. Less waste, more possibility.
About us
Preservatory is a place-based food preservation project aiming to reduce agricultural food waste and provide seasonal, accessible, prepared & preserved foods to our community. Founded in 2024 in Sonoma County, California, we’ve been inspired to work with local farmers and suppliers to amplify abundance they help create.

We offer local catering services for up to 50 guests. Our menus revolve around seasonal produce and preserves and can accommodate most dietary restrictions upon request.
